This sauce, created by Huan-Hua Chye of Madison, WI, is rich and sweet with a twist. It is perfect for those of us who love to blur the line between sweet and savory. Gjetost cheese shines with a caramel flavor and the tangy finish of a fine goat cheese. It is a top notch sauce with a flavor that will stun your foodie friends and you don’t even need to tell them how simple it was to make. We put this sauce on all kinds of things at a recent Cheese Saucasaurus Cheese Sauce Competition and I used some of the leftovers as a filling in banana whoopie pies. Try it for your next fondue party!
NOTE: Huan-Hua sent a note with the recipe that she would try it again without less (or no) sugar next time.
