Hearty Elk Stew

Have you had elk? We had not. But then I chatted with a kind person from Noble Elk Farm near Beloit, Wisconsin at the Dane County Farmer’s Market. The person was extremely excited about anyone trying their Elk for the first time, so I decided to give some stew meat a try.

This isn’t a particularly innovative stew. But it was delicious, and if you’re looking for a good elk stew, this is a winner. We used an instant pot. It would work just fine in a dutch oven or stock pot, but I’m not sure how long you’d want to cook it for tender meat. The instant pot was perfect for this. The meat was spoon tender and delicious. This stew meat did not have any wild game flavor at all. It could easily have been mistaken for beef.

The pasta we used was paccheri pasta, which I’d never had, but felt very strongly needed to go with this stew. It ended up working very well. I don’t know the science behind which pasta goes with which dish. I imagine a lot of other pasta options would work great!
