These hoagies are a riff on one of my favorite dishes – olives, fennel, and sausage. You could absolutely make a version of this with an italian sausage or add this topping for a super fancy brat. It’s really yummy here with some fresh avocado for a delightfully satisfying vegetarian/vegan sandwich.
