Leftovers don’t need to be sad. Almost any list of ingredients can be turned into a glorious mountain of delicious nachos. This recipe was made with leftover rotisserie chicken, but you can use turkey (Hello, Black Friday nachos!), pork roast, beef, whatever. Or, keep it meat-free if that’s your fancy. No shredded cheese? No problem. Julienne some slices! The idea here, is to use what you’ve got, but most importantly, to eat nachos.
Please note: the recipe serves 4. That is both technically accurate, and completely arbitrary. Here at Nachos and Dreams, we have a strict No Nacho Judgement Policy. If there were only 2 of you, and you wanted to polish off this entire platter, let’s just say, we could understand how that might be possible.
