Fried rice is an excellent vehicle to use up tons of the summer vegetable bounty. You can make this with all kinds of vegetable and flavor combinations. Dan likes to make fried rice with Indian spices. I typically lean more towards a Chinese style, but this recipe isn’t traditional to any ethnic cuisine. It’s just hearty and yummy.
